October’s first warm day calls for Pimm’s!
Dad’s birthday provided us with a great reason to celebrate and with the Spring weather well and truly here it seemed appropriate to eat outside. How wonderful after a miserable Winter! Donna Hay’s beautiful Almond and Mint crusted Chicken (from her gorgeous Seasons cookbook) paired beautifully with a simple take on a Potato salad, with Rocket, Parmesan and a Blue Cheese sauce. The meal was complete with some cute Gluten Free Lemon, Ricotta & Almond Cakes (from the June/July 2013 issue of the Donna Hay magazine). Happy Birthday Dad!
